More tailored data can indeed be generated from CORDEX data but it would not be practical to have all indices for all sectors available on disc. In that sense the post-processing of the CORDEX data can be a good way forward. You can use the CDS toolbox (or other tools) to calculate some of the variables (such as PET) you were looking for.
